Bistro C.V. Restaurant Review by Denver Post

Tucker Shaw, the Denver Post Dining Critic, has made his way to good ol’ Steamboat Springs a few times and though he usually doesn’t like to review a restaurant after only two visits, he decided the price of gas and the two experiences he had at Bistro C.V. were worth writing about.

Shaw describes Bistro C.V. as “simply appointed with contemporary finishes…also warm and accessible.” Bistro C.V. is located downtown Steamboat on the corner of 4th Street and Lincoln and is owned by Kevin Caparrelli & Brian Vaughn. The restaurant has been open for a few years now and regularly has critiques and write-ups in various Denver papers and magazines. The menu is simple (usu. only 15 dishes) but full of flavor. Shaw points out the perfect al-dente bed of risotto that the sockeye salmon sits on, the “sophisticated winter cozy, summer fresh” chicken chorizo pot pie and the “graceful gnocchi.” Read the Full Denver Post Review that is interestingly not all praising with a major downfall being the over-use of Truffle oil on too many dishes.

Though Bistro C.V is an animal of its own and one of the better and more modern restaurants in casual Steamboat, the restaurant has some stiff competition from the always insanely amazing Café Diva and newly opened Truffle Pig.
