The Truffle Pig is Here & Opens it’s Doors in Steamboat

The Truffle Pig in the new One Steamboat Place building at the base of the Steamboat Ski Area has opened the much anticipated restaurant. The restaurant is sporting a rustic elegant look with comfortable slope side dining options.

Expect some phenomenal cuisine from Executive Chef Ezra Duker from the Urban Farmer at the Nines Hotel in Portland. “He will oversee the menu of seasonally inspired cuisine. Chef Duker places an emphasis on simple, straightforward preparation utilizing the very best ingredients the Yampa Valley has to offer as well as sourcing key items from the best places around the globe. His vast array of culinary experience includes Chef de Partie at the renowned French Laundry, studying various styles of wine production at The Napa Valley Reserve’s cellar and knowledge of farm-to-table practices from the progressive Noble Rot Wine Bar in Portland,” stated a press release from the Timbers Resorts which own the Truffle Pig.

Lunch specialties include starters like the Baby Beet Salad a selection of flatbreads ranging from Roast Garlic and Good Olive Oil to Foraged Mushroom with Confit Shallots. Specialties on the lunch menu include Wild Pacific Salmon, a French Onion Dip, with Beef Short Rib. Standouts from the dinner menu include Day Boat Scallops with Cherry Tomatoes, Sweet Corn Pudding and Bacon, Roasted Saddle of Colorado Lamb, along with handmade pastas. One of the most anticipated dishes of the Truffle Pig is the classic presentation of Mussels and Frites served in a large cast-iron pot.
